Delicious Walnut Cookies Vegan/Vegetarian/No Eggs
- 2 14 cups unbleached white flour
- 14 cup wheat germ
- 34 cup turbinado sugar
- 12 cup soymilk powder
- 12 cup lecithin granules
- 12 teaspoon sea salt
- 1 tablespoon baking powder
- 1 cup chopped walnuts
- 12 cup soymilk
- 12 cup canola oil (or you can substitute with 1/2 cup apple sauce to cut down on fat, though I haven't tried it this wa)
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees.
- Mix all dry ingredients (the first eight ingredients) in a large mixing bowl.
- Add wet ingredients (the last three ingredients) and mix with your hands until you form a very thick batter.
- Roll about a tablespoonful of batter in your hands and then gently pat down to form a cookie.
- Makes approximately 24 cookies.
- Place your cookies on a non-stick cookie sheet and gently pat down again until cookies are the shape and size you want them.
- These cookies do not expand much, but they do rise slightly, so what you see when you put it in the oven won't be much different than the finished product.
- Bake for approximately 6-9 minutes depending on your oven and check them to make sure they are not burning.
- Take cookies out and flip them and put them back in the oven for another 2-3 minutes until golden on both sides.
- Cool on a rack and enjoy!
