Boysenberry Glazed Pork Tenderloin Recipe

  1. Flatten each tenderloin slice with palm of hand (into medallions); set aside.
  2. In small bowl, combine basil, salt, and pepper.
  3. Sprinkle both sides of tenderloin with seasoning mix.
  4. In small bowl, combine Boysenberry jam and vinegar.
  5. Heat oil in large skillet.
  6. Add in tenderloin teaks and cook for 4 to 5 min on each side.
  7. Remove from skillet.
  8. Add in onion to skillet and saute/fry in meat juices for 1 minute.
  9. Add in jam/vinegar mix and cook for 1 to 2 min to reduce.
  10. Return tenderloin to skillet and cook in sauce till heated through.
