Boysenberry Glazed Pork Tenderloin Recipe
- 1 x Pork Tenderloin (1 1/4 Lbs.), 1" Slices
- 1/2 tsp Dry Basil
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 c. Seedless Boysenberry Jam
- 2 Tbsp. Balsamic Vinegar
- 1 Tbsp. Extra virgin olive oil
- 1/2 c. Red Onion, Minced
- Flatten each tenderloin slice with palm of hand (into medallions); set aside.
- In small bowl, combine basil, salt, and pepper.
- Sprinkle both sides of tenderloin with seasoning mix.
- In small bowl, combine Boysenberry jam and vinegar.
- Heat oil in large skillet.
- Add in tenderloin teaks and cook for 4 to 5 min on each side.
- Remove from skillet.
- Add in onion to skillet and saute/fry in meat juices for 1 minute.
- Add in jam/vinegar mix and cook for 1 to 2 min to reduce.
- Return tenderloin to skillet and cook in sauce till heated through.
