Sweet Potato Salad
- 750g sweet potato, peeled and cut into large chunks
- 1/4 cup light sour cream
- 1/4 cup KRAFT FREE Mayonnaise
- 2 teaspoons balsamic vinegar
- 150g sugar snap peas, trimmed and blanched
- 1/4 cup fresh basil leaves, loosely packed, chopped
- 1/4 cup raw cashews, dry roasted
- 2 spring onions, chopped
- Boil or steam sweet potato until tender.
- Allow to cool.
- Combine the sour cream, mayonnaise and balsamic.
- Pour mayonnaise mixture over the sweet potato.
- Add the remaining ingredients and gently toss until potato is well coated.
