Cactus Eggs
- 23 cup nopales, rinsed, dried and chopped
- 4 eggs, whisked
- 2 tablespoons salsa de chile fresco or 2 tablespoons salsa, of your choice
- 13 cup colby-monterey jack cheese, grated
- 2 flour tortillas
- In large frying pan scramble Nopales, eggs, and Chile Fresco together.
- When eggs are set place in tortillas and top with cheese.
