Cactus Eggs

• 23 cup nopales, rinsed, dried and chopped
• 4 eggs, whisked
• 2 tablespoons salsa de chile fresco or 2 tablespoons salsa, of your choice
• 13 cup colby-monterey jack cheese, grated
• 2 flour tortillas

1. In large frying pan scramble Nopales, eggs, and Chile Fresco together.
2. When eggs are set place in tortillas and top with cheese.
