Lemon Butter
- 2 whole eggs
- 2 egg yolks
- 1 cup caster sugar
- 80 grams unsalted butter
- 1 sterilized jar
- 2 juicey lemons, finely grated zest and juice
- In a medium saucepan whisk by hand eggs and egg yolks
- Add sugar, whisk again by hand to combined
- Add lemon zest ane juice
- Place on medium heat stove top
- Add butter and continue to whisk by hand until thickens around 30 minutes
- Allow to cool slightly before pooring into clean sterilized jar...
- Enjoy.... i usually tripple the recipe to make around 3 jars because it doesn't last long in our house :)
