Rich and Tasty Tendon Sauce Made With Burnt Sugar
- 1 tsp Sugar
- 1 tsp Water
- 1 tbsp Bonito dashi stock
- 1 tsp Sake
- 1 tsp Soy sauce
- 1 tsp Mirin
- 1 dash The juice from grated ginger
- Combine the ingredients together, and make the teaspoon of water ready too.
- Put the sugar in a corner of a frying pan, and turn on the heat.
- The sugar will start melting in about a minute.
- When it has melted, add the teaspoon of water.
- (This is basically caramel sauce.)
- Quickly add the ingredients, mix and it's done.
- Extra... a great way to drain the oil off tempura!

- When a piece of tempura is done, lift it out and hold it still with about 1 cm of it still in the oil for 10 seconds.
- The oil is drawn back to the pan and drains straight off!
- There's almost no oil on the paper.
