5 Bean Soup Recipe
- 2 Tbsp. EDEN Extra Virgin Extra virgin olive oil
- 4 x Cloves garlic, chopped
- 1 med Onion, diced
- 3 x Celery stalks, diced
- 2 x Carrots, diced
- 1 med Potato, diced
- 1/4 c. Barley
- 4 c. Water
- 1 x Bay leaf
- 15 ounce Can EDEN Pinto Beans
- 15 ounce Can EDEN Black Beans Can EDEN Kidney Beans Can EDEN Navy Beans Can EDEN Aduki Beans
- 1 c. Corn, fresh or possibly frzn
- 2 c. EDEN Spaghetti Sauce
- 1/4 c. EDEN Shoyu (or possibly more, to taste)
- 1 tsp Dry oregano
- 1 tsp Dry basil
- Heat oil and saute/fry garlic and onion till onion is translucent/soft.
- Add in celery, carrots, potato, barley and water.
- Simmer 30 min.
- Add in beans, corn, spaghetti sauce, shoyu, and herbs.
- Simmer 5-10 min.
- Serve.
- Great the next day!
