Simple Potato salad with egg and mint
- 750g Pontiac or Toolangi Delight potatoes, quartered
- 4 eggs, hard boiled and quartered
- 5 spring onions, chopped
- 1/3 cup KRAFT FREE Mayonnaise
- 1/4 cup light sour cream
- 1/4 teaspoon salt and freshly ground black pepper
- 2 tablespoons chopped fresh mint
- Cook potatoes in boiling water until tender, drain, cool.
- Combine potatoes, eggs and spring onions.
- Mix together the mayonnaise, sour cream, mint, salt and pepper.
- Toss well and chill.
- Serve garnished with mint leaves.
