Black Bean Burgers

  1. In a mixing bowl combine beans, egg, onions, green onions, garlic, bread crumbs, and all the spices.
  2. Mash together with a fork, so beans get a little smashed, but leave some whole too.
  3. Mix well, and form into patties (makes about 3 large ones).
  4. In a large skillet over medium high heat, add a little cooking spray, and let heat up 1 minute.
  5. Once skillet is hot, add bean patties, and cook about 4 minutes per side, until crispy and warmed through.
  6. Flip, cook another 3 minutes, add the cheese, and let cheese melt.
  7. Plate up with your buns, thousand island dressing, black bean burger, cheese, onion, tomato, lettuce, and avocado.
  8. Serve with sweet potato fries and pickles!
  9. Enjoy!
