Black Bean Burgers
- 1 can (14 Oz. Size) Black Beans, Drained And Rinsed
- 1 Egg
- 1/2 cups Onions, Diced
- 1/4 cups Green Onions, diced
- 2 cloves Garlic, Minced
- 1/2 cups Whole Wheat Bread Crumbs
- 1/2 teaspoons Cumin
- 1/2 teaspoons Garlic Salt
- 1 teaspoon Smoked Paprika
- 1 teaspoon Garlic Powder
- 3 Whole Wheat Buns
- 1/4 cups Thousand Island Dressing, Or Your Favorite Condiments
- 3 slices Pepper Jack Cheese
- 1/2 cups Onions, Sliced
- 1 Tomato, Sliced
- 1 Avocado, Sliced
- Sweet Potato Fries And Pickles, To Serve
- In a mixing bowl combine beans, egg, onions, green onions, garlic, bread crumbs, and all the spices.
- Mash together with a fork, so beans get a little smashed, but leave some whole too.
- Mix well, and form into patties (makes about 3 large ones).
- In a large skillet over medium high heat, add a little cooking spray, and let heat up 1 minute.
- Once skillet is hot, add bean patties, and cook about 4 minutes per side, until crispy and warmed through.
- Flip, cook another 3 minutes, add the cheese, and let cheese melt.
- Plate up with your buns, thousand island dressing, black bean burger, cheese, onion, tomato, lettuce, and avocado.
- Serve with sweet potato fries and pickles!
