Carrot and walnut cake

  1. Cream sugar and 4 egg yolks.
  2. Set aside the egg whites for later.
  3. Mix in the grated carrots.
  4. Beat in the flour alternating with the oil.
  5. Mix well.
  6. Mix in the cinnamon powder and the baking powder.
  7. Beat the egg whites until stiff.
  8. Fold into the cake mixture.
  9. Fold in chopped nuts.
  10. Pour into a greased round or square cake tin and bake in a moderate oven for about 50 minutes.
  11. Cool and ice with creamed cheese icing or dust with icing sugar.
