Baked Mashed Potatoes With Cream Cheese Recipe
- 12 med Sized potatoes, peeled, cooked & warm
- 1 pkt (8-ounce) cream cheese, room temp
- 1/4 c. Butter
- 1/2 c. Lowfat sour cream
- 1 1/2 c. Lowfat milk
- 2 x Large eggs, slightly beaten
- 1/4 c. Onions, finely minced
- 1 tsp Salt Pepper to taste
- Mash warm potatoes in large bowl with mixer.
- Cut up cream cheese in small pcs and add in to bowl along with the butter.
- Beat till cheese and butter are melted.
- Fold in lowfat sour cream.
- Add in Large eggs and onions to lowfat milk.
- Add in this to the potatoes.
- Add in salt and pepper; beat well till light and fluffy.
- Place in greased casserole dish.
- Score the top with a fork for appearance and bake in preheated oven at 350 degrees F for 45 min or possibly till lightly brown on top.
- Let them cold for a few min before serving.
