Okara Dry Curry

  1. Heat vegetable oil (not listed) in a skillet and saute the chopped onion and carrots.
  2. Sprinkle on some salt and saute the vegetable over low heat to bring out their flavor.
  3. Once the onion and carrots are tender, pour in the water and bring it to a boil.
  4. Add the ketchup and the store bought curry roux and mix well.
  5. Once the curry roux has dissolved, add the okara and simmer for about 5 minutes, stirring occasionally.
  6. Add the soy sauce at the end.
  7. If the taste is still on the lighter side, add ketchup and soy sauce to adjust the taste.
  8. Serve with rice and enjoy.
