Breaded Veal with Cheesy Baked Gnocchi
- 1 recipe Cheesy Baked Gnocchi
- 1/2 cup flour
- 4 egg whites
- 1-1/3 cups dry bread crumbs
- 1/4 cup Cracker Barrel Finely Shredded 100% Parmesan Cheese
- 1-1/2 tsp. dried oregano leaves
- 1-1/2 tsp. garlic powder
- 1/4 cup oil
- 8 veal cutlets (2 lb./900 g), 1/4 inch thick
- Prepare Cheesy Baked Gnocchi as directed.
- Meanwhile, place flour in pie plate.
- Whisk egg whites in separate pie plate until blended.
- Combine next 4 ingredients in third pie plate.
- Heat half the oil in large skillet on medium-high heat.
- Dip 1 cutlet in flour, then egg whites, then crumb mixture, turning to evenly coat both sides of cutlet with each.
- Add to hot oil.
- Repeat with 3 of the remaining cutlets.
- Cook 2 to 3 min.
- on each side or until done.
- Remove from skillet; place on platter.
- Cover to keep warm.
- Repeat with remaining cutlets, heating remaining oil in skillet before adding the coated cutlets.
