Mediterranean Beef and Rice

  1. In a large skillet, cook the beef over medium-high heat for 7 to 8 minutes, or until browned, stirring occasionally to turn and crumble the beef.
  2. Drain and discard any liquid.
  3. Stir in the tomatoes with liquid, water, oregano, garlic powder, paprika, lemon pepper, and salt.
  4. Reduce the heat to medium.
  5. Cook for 5 minutes, stirring occasionally.
  6. Stir in the beans and rice.
  7. Reduce the heat to medium low.
  8. Cook, covered, for 5 minutes.
  9. Turn off the heat.
  10. Let stand for 5 minutes, or until the rice is tender.
