Italian Style Tripe in Tomato Sauce

  1. Cut the tripe into 1/4" thick strips, using scissors.
  2. Wash well in salted water and then rinse.
  3. Put in pot and cover with water to which one tbsp salt has been added.
  4. Add the black pepper, bay leaf and oregano.
  5. Bring to a boil then lower heat and simmer one hour.
  6. Drain and discard bay leaf.
  7. Add remaining ingredients and simmer for 30 minutes.
  8. If you like your sauce thinner, add a little water.
