Chocolate Banana Streusel Muffins
- 1/3 cup firmly packed brown sugar
- 1/4 cup Land O Lakes Unsalted Butter, softened*
- 2 medium (1 cup) ripe bananas, mashed
- 1 Land O Lakes Egg
- 1/2 teaspoon vanilla
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1/4 cup Land O Lakes Unsalted Butter, softened*
- 1/2 cup mini semi-sweet chocolate chips
- Heat oven to 350F.
- Place paper baking cups into 12 muffin pan cups; set aside.
- Combine 1/3 cup brown sugar and 1/4 cup butter in bowl.
- Beat at medium speed, until creamy.
- Add bananas, egg and vanilla; continue beating until well mixed.
- Place 1 cup flour, baking soda, cinnamon and salt into another bowl.
- Stir flour mixture into banana mixture just until moistened.
- Spoon batter evenly into prepared muffin cups.
- Combine all streusel ingredients except chocolate chips in bowl; mix well.
- Stir in chocolate chips.
- Spoon evenly over top of muffins.
- Bake 18-25 minutes or until light golden brown.
- Let stand 5 minutes; remove muffins from pan to cooling rack.
- *Substitute Land O Lakes Salted Butter.
