Oil-free Marinated Mushrooms
- 1/2 pack Shimeji mushrooms
- 1/2 to 1 small pack Enoki mushrooms
- 2 Shiitake mushrooms
- 1/2 pack Hen-of-the-woods
- 1/6 Onion
- 4 cm Carrot
- 1 tbsp White wine
- 2 1/2 tbsp Lemon juice
- 1 tsp White wine vinegar (or regular vinegar)
- 1/4 tsp Sugar
- 1 Salt and pepper
- 1 Powdered parsley (optional)
- Chop mushrooms into bite-sized pieces.
- Julienne the onion and carrot.
- Heat a frying pan and dry fry the mushrooms for 3 minutes over medium heat.
- Mix in the onion and carrot.
- Add white wine.
- When the alcohol has evaporated, cover the pan and steam for 2 minutes over low heat.
- Transfer into a bowl and set aside to cool.
- Combine with condiments and chill in the fridge.
- Dish it up and sprinkle on a pinch of dried parsley.
