Peppermint Delight

  1. Dissolve Jell-O in boiling water.
  2. Add cold water and extract.
  3. Chill until slightly thickened about 11/2 hours.
  4. Prepare.
  5. Measure 1 3/4 cups jell-o; pour into 9x5 loaf pan, and chill about 5 minute.
  6. Blend prepared cool whip into remaining gelatin.
  7. Carefully spoon 1/3 of the creamy mixture into the pan.
  8. Sprinkle with half the cookie crumbs.
  9. Repeat these two layers and spoon the remaining creamy mixture on top.
  10. Chill until firm about 4 hours.
