Mini Fruitcakes

  1. In large bowl, combine all ingredients except cherries.
  2. Line cupcake pans with paper liners or use triple thick paper liners on cookie sheets.
  3. Spoon a level measuring tablespoon of batter into each liner.
  4. Top each with a cherry half.
  5. Bake in a 300F oven for 25-30 minutes.
  6. Cool.
