Mini Fruitcakes
- 3 eggs, well beaten
- 1 (14 ounce) can sweetened condensed milk
- 1 (28 ounce) jar mincemeat
- 1 cup nuts, chopped
- 2 cups corn flakes, crumbs
- 12 cup all-purpose flour
- 1 teaspoon baking soda
- 36 candied cherries
- In large bowl, combine all ingredients except cherries.
- Line cupcake pans with paper liners or use triple thick paper liners on cookie sheets.
- Spoon a level measuring tablespoon of batter into each liner.
- Top each with a cherry half.
- Bake in a 300F oven for 25-30 minutes.
- Cool.
