Honey Tangerine Chicken Salad with Fresh Melon
- 3 qt. KRAFT Extra Heavy Mayonnaise
- 3/4 cup grated tangerine peel
- 2 cups tangerine juice
- 1-1/2 cups honey
- 2 Tbsp. coarse ground black pepper
- 2-1/4 gal. chicken, cooked, chopped Whole Foods 1 lb For $3.99 thru 02/09
- 6 gal. torn salad greens
- 3 gal. cantaloupe, honeydew or other seasonal melon, cut into spears
- Combine mayonnaise, tangerine zest, juice, honey and pepper.
- Mix half of the mayonnaise mixture with the chicken.
- Cover and refrigerate until ready to serve.
- Refrigerate remaining mayonnaise mixture to serve with the plated salads.
- For each serving: Place 2 cups of the salad greens on serving plate.
- Arrange 1 cup of the melon spears over greens; top with about 3/4 cup of the chicken salad.
- Drizzle with 2 to 3 Tbsp.
