Honey Tangerine Chicken Salad with Fresh Melon

  1. Combine mayonnaise, tangerine zest, juice, honey and pepper.
  2. Mix half of the mayonnaise mixture with the chicken.
  3. Cover and refrigerate until ready to serve.
  4. Refrigerate remaining mayonnaise mixture to serve with the plated salads.
  5. For each serving: Place 2 cups of the salad greens on serving plate.
  6. Arrange 1 cup of the melon spears over greens; top with about 3/4 cup of the chicken salad.
  7. Drizzle with 2 to 3 Tbsp.
  8. of the remaining mayonnaise mixture.
