Plain sponge cake

  1. Preheat oven to 180C
  2. Grease a large cake tin and set aside
  3. Mix boiling water and oil and set aside to cool.
  4. In a separate bowl beat eggs and castor sugar until just combined (do not overbeat)
  5. Add sifted flour and baking powder to egg mixture
  6. Add vanilla essence to the egg mixture and mix again
  7. Slowly add the water and oil mixture and mix until combined
  8. Pour into cake tin and bake for 20 min.
