Plain sponge cake
- 1/2 cup boiling water
- 1/2 cup oil
- 5 eggs
- 1 1/2 cup castor sugar
- 2 cup all-purpose flour
- 4 tsp baking powder
- 1 tsp vanilla essence
- Preheat oven to 180C
- Grease a large cake tin and set aside
- Mix boiling water and oil and set aside to cool.
- In a separate bowl beat eggs and castor sugar until just combined (do not overbeat)
- Add sifted flour and baking powder to egg mixture
- Add vanilla essence to the egg mixture and mix again
- Slowly add the water and oil mixture and mix until combined
- Pour into cake tin and bake for 20 min.
