Hobo Stew Recipe
- 3 lbs. round steak, trimmed, cubed & pre browned
- 4 med. potatoes, peeled & diced
- 4 lg. carrots, peeled & sliced
- 6 pcs celery, sliced
- 1 green pepper, diced
- 2 sm. onions, minced
- 2 Packages Lawry stew seasoning mix
- 1 (11 ounce.) can whole kernel corn, liquid removed
- 1 to 2 teaspoon salt
- 1 to 2 teaspoon pepper
- Water to cover
- Prepare 20 to 25 charcoal briquets.
- Place 10 to 15 briquets under 5 qt Dutch oven.
- Place potatoes, carrots, celery, pepper and onion in Dutch oven.
- Add in sufficient water to cover.
- Place lid on top, place 8 to 10 briquets on lid.
- Bring to a boil, boil 15 min.
- Carefully remove lid.
- Add in meat, stew mix, salt and pepper.
- Cover and simmer 15 to 30 min more, adding more briquets as necessary.
- When vegetables are tender, add in corn.
- Serves 6 to 8.
- Can also be made on the stove.
