Ranch-Style Eggs
- 1 can fire-roasted tomatoes
- 1 tbsp. finely chopped chipotle chile in adobo
- 1 tsp. adobo sauce
- 4 large eggs
- 8 corn tortillas
- 1 1/2 oz. feta cheese
- In 10-inch skillet, simmer fire-roasted tomatoes, chipotle chile in adobo, and adobo sauce on medium 5 minutes.
- Gently crack eggs into skillet.
- Cover; cook 5 minutes.
- Uncover; cook until desired doneness.
- Wrap tortillas in damp paper towels; microwave on high 1 minute or until warm.
- Divide tortillas among 4 plates; top with eggs and sauce.
- Sprinkle with feta cheese.
