Ranch-Style Eggs

  1. In 10-inch skillet, simmer fire-roasted tomatoes, chipotle chile in adobo, and adobo sauce on medium 5 minutes.
  2. Gently crack eggs into skillet.
  3. Cover; cook 5 minutes.
  4. Uncover; cook until desired doneness.
  5. Wrap tortillas in damp paper towels; microwave on high 1 minute or until warm.
  6. Divide tortillas among 4 plates; top with eggs and sauce.
  7. Sprinkle with feta cheese.
