Black Cherry and Yam Casserole
- 1 (40 ounce) can yams, drained
- 12 cup brown sugar, packed
- 2 teaspoons cornstarch
- 34 teaspoon orange zest, finely grated
- 14 teaspoon salt
- 14 teaspoon ground cinnamon
- 12 cup apricot nectar
- 1 (15 ounce) can bing cherries, drained (Pitted Dark Sweet)
- 1 tablespoon unsalted butter
- Preheat oven to 375 degrees F, then grease an 11"x7" baking dish.
- Arrange yams in the prepared baking dish.
- In a saucepan, whisk together the brown sugar, cornstarch, orange zest, salt, & cinnamon, then stir in the apricot nectar until smooth.
- Bring almost to a boil, stirring constantly, then reduce heat & simmer 2 minutes, before removing from heat.
- Add pitted dark sweet cherries & butter, stirring to melt the butter, then pour this cherry mixture over the yams.
- Bake, uncovered for 30 minutes, then serve & enjoy!
