Side Salad with Edamame Beans, Okra and Corn
- 300 grams Edamame beans
- 5 Okra
- 2 Myoga ginger
- 100 grams Corn (frozen or tinned)
- 1 tsp Sake
- 1 and 1/2 tablespoons Soy sauce
- 1/4 tsp Dashi Japanese stock powder
- 5 grams Bonito flakes
- Combine the ingredients.
- Wash the edamame pods and rub with salt.
- Cook in the boiled and salted water.
- Cool down and remove shells.
- Add the bonito flakes into the mixture.
- Wash the okra and rub with salt.
- Cook in boiled and salted water.
- Cut into about 1 cm-lengths.
- Slice the myoga ginger thinly and on the diagonal.
- Blanch the corn in salted water and drain in a colander.
- Mix everything gently and you're done.
