Chicken Taco Salad Recipe
- 2 whole chicken breasts, cooked & diced
- 2-4 med. tomatoes, diced
- 1/2-1 c. Cheddar cheese, grated
- 1/2-1 c. Jack cheese, grated
- 1 can black olives, pitted
- 1-2 avocados, minced
- 1 med. can kidney beans, liquid removed
- 4 green onions, minced
- 1-2 heads iceberg lettuce
- Romaine or possibly red leaf, torn into bite-size pcs
- 1 bag taco flavored Doritos
- Garnish:
- Lowfat sour cream
- Salsa
- Combine lettuce, chicken, tomatoes, cheese, olives, avocados, beans and green onions in a large salad bowl.
- Toss with dressing and add in Fritos last.
- Serve with a garnish of lowfat sour cream and salsa.
- This is a favorite with the ladies.
- Be sure to make plenty.
- 6-8 servings.
