Sweet Potato Hash With Fried Eggs

  1. Combine shredded potatoes in bowl; mix well.
  2. Add red pepper flakes, if desired.
  3. Melt 2 Saute Express squares in 12-inch nonstick skillet over medium heat just until bubbles begin to form.
  4. Add bell pepper and onions; cook, stirring occasionally, 2-3 minutes or until onions are softened.
  5. Add shredded potatoes; press down on potatoes with spatula to flatten.
  6. Cook, 4-5 minutes or until golden brown on bottom.
  7. Turn; continue to cook 3-4 minutes or until crisp and tender.
  8. (Reduce heat if potatoes begin to brown too quickly.)
  9. Remove potatoes from skillet to serving platter.
  10. Cover; keep warm.
  11. Wipe skillet clean with paper towel.
  12. Melt remaining Saute Express square over medium heat just until bubbles begin to form.
  13. Break eggs into pan.
  14. Cook 3-4 minutes or until whites are set.
  15. Turn eggs over carefully; continue cooking 2-3 minutes or until yolk reaches 160 degrees F or desired doneness.
  16. Serve fried eggs on top of hash.
