Sherry Balsamic Vinaigrette

• 1/4 cup balsamic vinegar
• 1 teaspoon Dijon mustard
• 1 tablespoon dry sherry
• 1/2 teaspoon salt
• 1/2 teaspoon fresh-ground black pepper
• 1/2 cup olive oil

1. In a small bowl, whisk together all the ingredients but the oil.
2. Add the oil slowly, whisking.
