Mom's Special Potatoes

  1. Pre-heat oven to 350*.
  2. Wash, peel and cube potatoes.
  3. Place potatoes in large casserole dish.
  4. Slice butter or margaine in 8 equal pats.
  5. Place pats of butter or margarine on top of potatoes.
  6. Salt and pepper to taste.
  7. Place potatoes in pre-heated oven and bake for 35-40 minutes or until done.
  8. You may want to take them out mid-way through and stir.
  9. Combine sour cream and onion soup mix.
  10. Stir well and set aside in'fridge until time to serve.
  11. While potatoes are baking, combine onion, drained mushrooms, and a bit of oil or butter.
  12. Saute until onions are clear.
  13. Set on low and wait on potatoes to finish baking.
  14. When potatoes are done, remove from oven and turn oven off.
  15. Evenly spread onion and mushrooms over the top of potatoes.
  16. Then sprinkle with cheese.
  17. On top of cheese sprinkle bacon bits.
  18. Place dish back in turned off oven for about 5 minutes or until cheese has melted.
  19. Serve with onion dip and enjoy!
