Three-Cheese Polenta Pizza
- 2 tsp. olive oil
- 1 package precooked polenta
- 1 c. ricotta cheese
- 1/2 c. mozzarella cheese
- 1/4 c. Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 c. loosely packed fresh basil leaves
- 8 medium plum tomatoes
- In nonstick 12-inch skillet, heat oil over medium-high heat until hot.
- Arrange polenta slices in even layer in skillet and cook until lightly browned on both sides, about 15 minutes.
- Meanwhile, in medium bowl, mix ricotta, mozzarella, Parmesan, 1/4 tsp.
- salt and pepper until blended.
- Reserve 1 Tbsp.
- sliced basil for garnish.
- In another medium bowl, toss tomatoes with remaining basil and 1/4 tsp.
- salt.
- Reduce heat to medium; spoon cheese mixture over polenta slices in skillet and top with tomato mixture.
- Cover skillet and cook until hot and cheese has melted, about 5 minutes.
- Sprinkle with reserved basil.
