Mango Salsa
- 2 mangoes, peeled, pitted, and diced (2 cups)
- 1 large yellow bell pepper, finely chopped (1 cup)
- 1/2 cup finely chopped red onion
- 1/4 cup chopped cilantro
- 2 Tbs. lime juice
- 1 red jalapeno chile, finely chopped
- 1/2 tsp. smoked paprika
- Toss together all ingredients in small bowl.
- Season with salt and additional paprika, if desired.
