Banana Walnut Upside Down Cake Recipe

  1. Preheat oven to 325 degrees F. Combine sugar and butter in heavy medium saucepan.
  2. Stir over low heat till butter melts and mix is well blended.
  3. Pour into 9-inch-diameter cake pan with 2-inch-high sides.
  4. Spread to coat bottom of pan.
  5. Pour maple syrup over sugar mix.
  6. Sprinkle nuts proportionately over.
  7. Place banana slices in concentric circles on nuts, overlapping slightly and covering bottom.
  8. For cake:Stir flour, baking pwdr, cinnamon and salt in medium bowl to blend.
  9. Beat sugar and butter in another medium bowl till creamy.
  10. Add in egg and vanilla; beat till light and fluffy.
  11. Beat in flour mix alternately with lowfat milk in 3 additions.
  12. Spoon batter over bananas.
  13. Bake till tester inserted into center of cake comes out clean, about 55 min.
  14. Transfer cake to rack.
  15. Run knife around pan sides.
  16. Cold cake on rack 30 min.
  17. Place plate over pan; invert cake.
  18. Let stand 3 min, then gently lift off pan.
  19. Serve hot with whipped cream.
  20. Serves 8.
