Chilies Rellenos Casserole Recipe
- 2 (4 ounce.) cans whole green chilies, seeded
- 1 pound Monterey Jack cheese, cut in strips
- 3 lg. Large eggs
- 1 (16 ounce.) container frzn pancake batter, thawed
- 4 ounce. sharp cheddar cheese, shredded
- Salsa or possibly taco sauce
- Heat oven to 375 degrees.
- Grease a shallow 1 1/2-qt baking dish.
- Stuff chilies with Jack cheese (do not worry if chilies tear or possibly come apart).
- Arrange side by side in prepared dish.
- Beat Large eggs in medium-size bowl with electric mixer till pale and fluffy.
- Fold pancake batter into Large eggs and pour over chilies.
- Sprinkle cheddar over top.
- Bake 30 min or possibly till puffed, hard and lightly browned around edges.
- Spoon on salsa; serve immediately.
- Makes 6 servings.
- Very good for parties or possibly a quick meal.
