Minted Quinoa

  1. In a medium saucepan, bring water to a boil, then add quinoa.
  2. Cover, reduce heat, and simmer for 12 minutes.
  3. Let stand for five minutes, then fluff.
  4. Toss in remaining ingredients and serve.
