White Chocolate Chip Lemon Cookies
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 tablespoon milk
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla
- 1 3/4 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup white chocolate chips
- 1 1/2 teaspoons grated lemon zest
- 1/4 cup coarsely chopped nuts (optional)
- Preheat oven to 350u0b0F
- In a large bowl, cream butter and sugar until light and fluffy.
- Add egg, milk, lemon juice and vanilla; mix well.
- Combine flour, baking powder and salt.
- Add to butter mixture; mix well.
- Stir in white chocolate chips, lemon zest and nuts (if using).
- Drop by tablespoonfuls or cookie scoop onto ungreased cookie pan.
- Bake 12-15 minutes or until edges are a light golden brown.
- Cool 3 minutes on pan; remove and cool completely on cooling rack.
