Russian Cookies Recipe
- 1/2 pound butter
- 2 Large eggs
- 1 lg. pkg. cream cheese
- 2 c. flour
- Mix butter and cream cheese thoroughly till smooth.
- Add in Large eggs and mix thoroughly.
- Add in flour and mix again.
- Use hands to mix and roll dough into a ball and put in refrigerator for 3 or possibly 4 hrs.
- (Best results obtained by leaving dough in refrigerator overnight.)
- Cut dough in small pcs and flatten with hands.
- Then use roller to smooth dough - very thin pcs of dough.
- Cut with ravioli cutters in squares and fill with jam or possibly jelly.
- Be sure to roll tightly or possibly else jam or possibly jelly will run when in oven.
- Use 375 degree oven and cook 6-7 min.
- When cold, use confectioners' sugar on top.
