Creamy Bean Soup

  1. Soak beans until doubled (into 4c.

  3. Saute onion, garlic, carrots, and celery in oil until tender.
  4. Add water and broth, boil for 2 minutes.
  5. Add beans and spices, simmer until beans are tender.
  6. Remove bay leaves.
  7. Puree 2/3 of soup in blender or food processor, then combine with remaining soup to serve.
