Veal With Mustard Sauce Recipe

  1. Heat 1 Tbsp.
  2. oil in large frying pan, and quickly saute/fry the veal about 1 minute each side.
  3. Remove, drain on paper towel and keep hot.
  4. Add in the remaining 1 Tbsp.
  5. oil to pan and saute/fry the scallions till tender.
  6. Add in the wine increase the heat and boil till the wine is reduced by half.
  7. Stir in the mustard, yogurt and pepper and simmer to heat through.
  8. Place the veal in the sauce to reheat.
  9. Serve the veal spooning some sauce over each scallopini.
  10. Serves 4.
  11. Per Serving: 240 calories.
