Chicken with plum chutney
- 4 boneless chicken breast
- 2 tbsp olive oil
- 1/2 onion
- 1/2 tsp red pepper flakes
- 4 plums
- 1/4 cup brown sugar
- 2 tbsp cider vinegar
- 3/4 tbsp curry powder
- 1/2 tbsp minced ginger
- 1 cup balsamic rice
- Fry chicken in olive oil till done, set aside
- Fry onion and pepper flakes till onion is translucent
- Add remaining ingreadians pluss 1)4 cup water to pan.
- Simmer on low for about 8min.
- I like to serve over rice
