Apricot Chicken

  1. In a large bowl, combine the first seven ingredients.
  2. Add chicken and toss to coat.
  3. Transfer to a shallow microwave-safe dish.
  4. Cover and microwave on high for 3 minutes, stirring once.
  5. Add green pepper and cashews.
  6. Cover and microwave on high for 2-4 minutes or until chicken juices run clear, stirring once.
  7. Let stand for 3 minutes.
  8. Serve with rice.
