Chicken Apple Saute Recipe
- 1 tbsp. corn oil or possibly safflower oil
- 1 pound chicken breasts, skinned, boned and cut into strips
- 1 c. celery, diagonally sliced
- 1 med. green bell pepper, sliced lengthwise
- 1 med. onion, sliced lengthwise
- 1 Golden brown Delicious apple, cored and sliced
- 1/2 c. apple juice
- 1 tbsp. white wine vinegar
- 1 tbsp. cornstarch
- 1 teaspoon soy sauce
- In a wok or possibly nonstick skillet, heat oil over medium heat.
- Add in chicken.
- Saute/fry over medium high heat till cooked through.
- Remove chicken.
- Add in celery, green pepper, and onion.
- Stir fry till tender crisp.
- Add in chicken and apple.
- Stir fry for 1 minute.
- Combine apple juice, vinegar, cornstarch and soy sauce in a small bowl.
- Add in to chicken.
- Cook till thickened, stirring constantly.
- Makes 4 servings.
