Mini Quiche in Prosciutto cups
- 1 eggs
- 1 thinly sliced prosciutto
- 1 spinach
- 1 Shredded Asiago cheese
- 1 Diced Tomato
- 1 garlic cloves
- 1 Shallot
- Slice shallot in thin strips and dice garlic
- Saute garlic and shallot in tablespoon of olive oil to caramelize
- Add spinach to pan to wilt and salt
- Beet eggs
- Heat oven to 375
- Line cupcake tray with 1 slice if prosciutto fold to fit the cup
- When cooled add spinach, garlic and shallot mixture to beaten eggs
- Add as I ago cheese as desired
- Pour into cups
- Bake for 30 minutes
