Tomato Stew Lecso
- 4 slices bacon, cut in small pieces
- 1 onion, chopped
- 2 red bell peppers, roasted first, chopped 1/2-inch pieces
- 2 teaspoons salt
- 2 garlic cloves, mashed
- 6 tomatoes
- 1 teaspoon paprika
- Fry bacon; add onion; cook until translucent.
- Add bell pepper.
- Sprinkle with salt.
- Cook slowly for 20 minutes.
- Add garlic.
- Add tomatoes.
- Add paprika.
- Simmer 20 minutes; mash fine; it should be thick.
