Creamy Skillet Squash

  1. Heat a large skillet over medium heat.
  2. Melt butter and saute onions.
  3. When onions start to brown, add squash (reduce heat to medium-low if necessary to prevent onions from burning - you want them caramelized, not burnt).
  4. Saute squash until soft but not mushy.
  5. Remove from heat and add cream cheese.
  6. Stir until melted.
  7. Salt and pepper to taste.
