Caribbean Shrimp Rolls

  1. Combine buttermilk and chopped cheese in blender container or food processor bowl fitted with metal blade or blender container.
  2. Process, scraping sides occasionally, until smooth.
  3. Stir in mango, green onion and cilantro.
  4. Stir in shrimp.
  5. Cover; refrigerate.
  6. Heat broiler.
  7. Open rolls; place 2 half slices cheese onto each side.
  8. Place rolls onto large ungreased baking sheet.
  9. Broil 4 to 6 inches from heat 2-3 minutes or until rolls are lightly toasted and cheese is melted.
  10. Divide shrimp salad evenly among rolls.
  11. Garnish with additional cilantro and mango, if desired.
  12. Serve immediately.
