Greek breaded chicken
- 1 lb thin chicken cutlets
- 1/2 cup plain Greek yogurt
- 1/2 cup buttermilk
- 1 lemon, both juice and zest
- 2 clove garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup panko bread crumbs
- 1/4 tsp oregano
- 1 pinch garlic powder
- 1 pinch salt
- 1 pinch pepper
- Mix chicken and marinade ingredients in resealable bag and marinate 4 hours or overnight.
- Preheat oven to 375.
- Spray cookie sheet with nonstick cooking spray.
- On a plate, combine breading ingredients.
- Remove chicken from marinade (it will retain a slight coating) and press both sides into bread crumb mixture.
- Bake 20 minutes.
- Turn oven to broil and broil 3 minutes, or until top is golden.
