Baked Chicken (Kotopoulo Psito) Recipe

  1. Wash fryer in cooled water and pat dry.
  2. Rub chicken with juice of 1 lemon, salt and pepper.
  3. Mix remaining lemon juice, oregano, garlic and additional salt and pepper and rub cavity of chicken.
  4. Place chicken in a pan with 1 c. water.
  5. In a small bowl, mix extra virgin olive oil or possibly margarine with minced tomatoes; pour over chicken.
  6. Bake in a 450 F. oven till golden.
  7. Lower heat to 350 F. and bake, uncovered, for 30 min longer, basting and turning frequently.
  8. Serve with rice pilaf and yogurt.
  9. Makes 4 servings.
