Spicy Snapper and Shrimp Stew

  1. Heat the olive oil in a large saucepan.
  2. Add the garlic, bell pepper and onion, cover and cook over moderately low heat until softened, about 8 minutes.
  3. Add the tomatoes, crushed red pepper, thyme and saffron, cover and simmer for 5 minutes.
  4. Add the snapper and shrimp, cover and simmer until the seafood is just cooked through, about 5 minutes.
  5. Season with salt and pepper.
  6. Serve in bowls at once with the rice.
