Ww Core Unstuffed Peppers

  1. Heat olive oil in a large stockpot over medium-high heat.
  2. Add ground meat, salt and pepper.
  3. When meat is browned, add garlic, onion, bell pepper and bay leaf.
  4. Cook 7-8 minutes, or until veggies are tender. Stir in chicken broth/stock and tomatoes and bring to a boil.
  5. Stir in rice, return to boil, then lower heat to a simmer.
  6. Cover and cook 5 minutes.
  7. Remove from heat; remove cover.
  8. Fold in basil.
  9. Remove bay leaf.
  10. Plate and top with cheese.
