Paleo Fried Rice Recipe
- 1 head of cauliflower
- 3 slices of bacon
- 2 egg whites and 1 egg
- 1 small onion, finely diced
- 1 carrot, finely diced
- 1 red pepper, finely diced
- 1 cup broccoli florets, finely chopped
- 1 tablespoon coconut aminos (paleo substitute for soy sauce)
- 1/4 teaspoon fish sauce
- 1 tablespoon ghee (or other oil of choice)
- Salt and pepper to taste
- Chop cauliflower into florets and pulverize in a food processor until it resembles rice.
- Heat a large skillet on medium heat.
- Add ghee and cauliflower; cook for 5 minutes.
- Add remaining vegetables, and cook until soft, another 7-10 minutes.
- While cauliflower is cooking, heat a separate skillet on medium heat, and add bacon and eggs.
- When they are done, set aside and dice.
- When cauliflower and vegetables are done cooking, add coconut aminos and fish sauce.
- Taste and adjust seasonings accordingly.
- Add bacon and eggs.
- Stir until combined.
- Then, dig in!
